Happy National Donut Day! While I do not typically celebrate these things, any day that involves a donut is a day I can get behind. Surprisingly, or perhaps not, I did not wake up knowing that it was a day to celebrate but as soon as I learned about “Donut Day” I popped out of bed on a quest to make a decent tasting pre-work, no-sugar-crash-even-though-its-a-donut, donut. Essentially I wanted a unicorn. (Luckily I genuinely believe that those mythical creatures may appear in the woods at any moment.)
For some reason I already owned a donut pan, a crucial element to this recipe that can be easily purchased on Amazon for relatively cheap. The rest of these ingredients you likely already have in your home which makes these the best quick treat you can make! They are chocolaty and banana-y and 100% delicious! The recipe below will make 6 donuts, enough to fill one pan, but if you double, triple or even quadruple this recipe, I won’t tell!
Ingredients for “Pronuts”:
1 banana
1 egg
2 Tbs. Almond Butter
1 Tbs. Coconut Oil, melted
1.5 Tbs. Flour
1 scoop Protein Powder, I like using cinnamon bun flavor but vanilla would be good too
1/4 tsp. Baking Powder
1/4 tsp. Baking Soda
Start by pre-heating the oven to 350 degrees (always a good place to start). Next blend the banana, egg, almond butter and oil. Transfer the wet ingredients to a bowl and then mix in the flour, protein powder, baking soda and baking powder. Grease the donut pan well and then pour the mixture evenly into the six molds. You may have to shake the pan a bit to get the mixture to even out.
Bake the “Pronuts” for 12 minutes or until a toothpick inserted into the donuts comes out clean. Let them cool in the pan for about 5 minutes before transferring to a wire rack to completely cool.
Ingredients for “Paleo Ganache” Glaze:
1/4 cup roughly chopped bittersweet chocolate (chocolate chips would work)
1/4 can fun fat coconut milk
While the donuts are cooling place the coconut milk into a microwave safe bowl and microwave for about 45 seconds or until steaming and slightly bubbly around the edges. (I am sure that you could do this in a fancy manner over a double boiler but this recipe is supposed to be easy, remember?) Mix in the chocolate and stir to combine.
Take the cooled “Pronuts” and dip one side in the ganache making sure to coat the donut well. You may want to do two glaze coats, I won’t stop you! Before the ganache is cool take some multicolored sprinkles and, well, sprinkle them on the glaze- what is a donut without sprinkles, after all?
