Happy 4th from Les Deux! We love this holiday- what isn’t there to like about pool party days and firework nights?
This Thursday (side note, can we talk about how silly it is to have mid week holidays? I get that it is a numbered day but come on!) we have been laying in the sun and jumping around in the pool! We have an annual tradition to go over to our friends that live on the 17th tee box of Cherry Hills Country Club to watch the fireworks.
When we were deciding on a dessert to bring we wanted something both patriotic and (relatively) easy to make. What could be more patriotic than pies? And what could be more perfect for a party than MINI pies! Enter patriotic hand pies! These seriously couldn’t be easier to make and you can store buy all of these ingredients.
This Recipe makes 22 pies- weird, I agree! We decided to go with half apple and half cherry. You can use store bought dough or go with your favorite homemade variety. You can also buy pre-made fillings or make your own! I always prefer homemade fillings in pies but there are some good pre-made fillings!
Ingredients:
4 pie crusts
Cherry filling
Apple filling
Egg + a little water for an egg wash
Sanding Sugar
Cinnamon sugar
Roll out the crusts a bit thinner than the store bought rolls come out- about 1/8 inch. Take a round cookie cutter (or biscuit cutter or glass, in my case) and punch out 44 circles. You will have to pull the scraps together and re-roll it a few times to get this amount. Next, place 22 of the circles on baking sheets fitted with silpat silicone baking mats and spoon 1 tsp of the filling onto each. We did 11 apple, 11 cherry.
Place all of the pie “tops” on the filled bottoms and take a fork to crimp the edges. Really make sure that these go through so the pies seal but don’t worry too much if there are a few spots that aren’t perfectly done. Now take the paring knife and cut some vents in the tops of the apple crusts and brush egg wash on all of them. Put the star cutouts on the apple pie tops and then sprinkle the apple pies with cinnamon sugar and sanding sugar on the cherry pies.
For the cherry pies, take the remaining 11 crust circles and cut small stars out of the center. A cookie cutter would be clutch here but you can also cut them by hand with a paring knife like we did!
Pop the pies into a preheated oven at 425 degrees for about 15-20 minutes or until crusts are golden brown. Take out of the oven and let them cool on a baking rack so the bottoms stay crispy! Once cool place in a basket lined with red, white and blue napkins and serve!
