Who doesn’t like ice cream? Seriously, show me someone that really doesn’t like ice cream and I will show you a person I don’t trust. There is truly nothing better than a bowl of ice cream on a hot summer night. I set out to make a healthier ice cream that would give a nice creamy texture without the actual cream. This ice cream is sweetened only with honey and has a perfect texture and flavor. I served it with the warm leftovers of a homemade berry jam I was whipping up at the same time- the perfect compliment.
The other great thing about this ice cream recipe is that it can be used for a base and you could turn it into any flavor you want. If you want to mix in more hard ingredients, like chocolate chips, I would recommend folding them in at the soft serve stage.
I love my Kitchen Aid Ice Cream Maker as it doesn’t require another appliance and can give a soft serve like texture to the ice cream or it can be put into a container and frozen for a more typical scooped ice cream feel! It also makes it so this is one of the simplest recipes for ice cream ever! It does not require any heating or cooking at all. So we are talking mix and freeze- could it be easier?! I also think that this mixture would freeze well on its own in just a loaf pan if you do not have an ice cream maker. In that case, just mix the ingredients very well and pour into the pan and freeze!
Ingredients:
1 can Full Fat Coconut Milk
1 Vanilla Bean, seeds extracted
3 Tbs. Honey
1 Tbs. Vanilla Extract
1 Egg
Start by beating all ingredients together in a bowl. Then, transfer to the ice cream maker and follow the instructions for that machine. For the Kitchen Aid mixer, take the frozen bowl and attach it to the stand mixer. Pour the custard mixture into the frozen blow and set the blender on the lowest setting. I tend to check it every 5 minutes and scrape down the sides if it freezes up the sides too quickly. Mix to your desired consistency, for us this was a little over 20 minutes.
You can either serve it from the mixer for a soft serve texture or you can transfer this into a freezer safe container for it to take on a harder, more scoopable, consistency.
